Triple-distilled peated Irish whiskey. This is a bottle of WTF if we've ever seen one. And apparently the first peated triple-distilled Irish malt in over a century. Bill Phil - named for W.D. O'Connell's great grandfather William Philip O'Connell - was matured in first fill ex-Bourbon barrels, ranging in age from 3-5 years. This is batch 04, bottled in Autumn 2021.

This 3 year old Waterford Single Malt is billed as the world's first Biodynamic whisky. The barley was grown on a number of farms and the spirit was matured in a mix of First Fill Ex-Bourbon, Virgin American Oak, Bordeaux, and Vin Doux Naturel casks.
