A spicy nose progresses to the taste, filling the mouth and tickling the tastebuds. The long finish starts as fresh rye bread and moves slowly toward buttered cinnamon toast, ending with just a hint of English walnut.

Confiscated refers to a fanciful story about a confiscated warehouse of whiskey barrels during prohibition, yadda yadda yadda. Kentucky Owl is a revived brand with roots that go back to its founding in 1879. It was recently relaunched in 2014 with whiskey from an undisclosed source in Kentucky. The brand itself is owned by the Stoli Group of Stolichnaya Vodka infamy. Bottled at 48.2%.

Though there are plans to build a proper Kentucky Owl Distillery, but construction is not likely to begin until at least 2024. Kentucky Owl Wiseman is currently contract distilled at Bardstown Bourbon Company. The Wiseman is a blend of the distillery's Rye and Wheat Bourbon mash bills that are at least four years of age. These two Bourbons are then further blended with 5.5 Year Old and 8.5 Year Old Bourbon sourced from undisclosed Kentucky distilleries. The resulting whisky is bottled at 45.4%.

Still Austin Distillery resides in Austin, Texas, and was founded in 2015. What sets Still Austin apart from other craft distilleries is its 42-foot tall column still dubbed Nancy, which was crafted by Forsyth's of Scotland.
