Domaine Nico – one of Laura Catena’s projects – is revealing the potential of Pinot Noir in Uco Valley's Tupungato. La Savante hails from Gualtallary (1,400m above sea level) where the soil is mostly sand and stone with a calcareous layer underneath. The subtle but complex aromatic profile features sour red fruit, rose, mushrooms and hints of truffle; while the flow is voluminous and refined with good freshness and polished tannins.
750 mlClone 115 is fermented with 20% whole clusters and indigenous yeast in a 600L oak roll-fermentor, and clone 777 is fermented with 50% whole clusters and indigenous yeast in small 500L stainless-steel tanks. Punch-down extraction is done by hand. 7-10 days of maceration with malolactic fermentation in the barrel. This vertical wine is feminine and serious, with minerality, spicy red fruits, and an earthy character. Domaine Nico La Savante displays aromas of red fruits, earthy thyme, rosemary, and sweet spices such as clove. It has medium-high acidity, low alcohol, and a slight minerality alongside integrated oak and layered tannins.
