Hugo Grenon of Cidres Polisson is a well-known winemaker and gastronomist in Quebec. Professionally trained as a geologist, his focus is on terroir and orchards, a fact that is reflected in his final products. Polisson Empire is an ancestral method of sparkling cider with Empire apples from Oka, Québec. It sees a minimum of two weeks of carbonic maceration with ambient yeast. No fining, filtration, or sulphur dioxide added. All the disgorging, levelling, capping, and bottling are done by hand. Ideal as an aperitif or dessert.
