Made entirely from roussanne, this legendary vineyard has built its reputation on a single hill that it shares with syrah plantings for the red Ermitage. Sheltered from northerly winds, this south-facing site receives good exposure to the sun while enjoying a Mediterranean climate. Roussanne is named after its ripe skin colour, a reddish-gold pigment that equates to the French word roux (red-brown). The variety is thought to have originated in the northern Rhône Valley, where the majority of modern-day plantings are found because it benefits from the warm temperatures and long sunlight hours it needs to achieve full maturity. The average age of the vines is 50 years. Lush melon, pear and apricot notes are underscored by a buttery vanilla note from the French barriques, with a floral whiff of honeysuckle through the finish. Ideal with wild salmon, halibut and roast chicken.

Note: Not to be confused with Domaine Paul Jaboulet, Phillip and Vincent inherited some of the best vineyard sites when the former was broken up prior to being sold to an American conglomerate. The father and son duo continue to make wines in the grand tradition of Paul Jaboulet, as Phillipe was the winemaker there for 30 years.
