The much lauded Straight Bourbon from Kings County Distillery of New York is made from a mash bill of 80% Organic Corn grown in New York State and 20% Malted Barley sourced from England. bottled at 45%.
Kings County Distillery has made quite a name for themselves since their founding in 2010. The were the first distillery to operate in New York City since Prohibition and are considered one of the original distilleries of the North American craft movement. The founders of Kings County Distillery even wrote the book for it with their Guide To Urban Moonshining, which they originally released in 2013.

Koval Bourbon is a craft Bourbon made at their own distillery in Chicago, Illinois. The mashbill that Koval uses is one of the things that sets their Bourbon apart from others. It is a combination of 51% Corn and 49% Millet. Each bottling is from a single barrel and cut to 47% ABV. It is also certified Kosher as well as organic.
