Perhaps one of the most famous appellations and blends coming out of Southern Italy, Salice Salentino is a traditional Puglian wine primarily consisting of Negroamaro and other local black grape varietals. The intense ruby colour is met with lively tannins and a medium body, creating a wine that is rich in dark fruit and spice. Located in the Salento region of Puglia and named after its founder, Cantine Paolo Leo officially began in 1989 after Paolo inherited the family land and constructed the Palmento (the village’s first stone building used for the production of wine specifically). While the opening of the Paolo Leo winery marked a new chapter for the family, their story and legacy in viticulture can be traced back to the early 20th Century in Monticello Masseria. This story and legacy have ultimately resulted in a philosophy driven by family, hard work, and a love for quality wines.
Today this philosophy is upheld by Paolo and his wife Roberta as they prepare their eldest sons Nicola and Stefano to take over and lead the next generation of winegrowers. This makes them the perfect balance between traditional and modern as each generation stands to learn something from the other.

A blend of Negroamaro (80%) and Malvasia Nera, picked from vines 15 to 20 years old. The wine spends between four and six months maturing in French oak prior to bottling. Close to ten years on since the grapes were picked, the wine is currently showing wonderful lavender, cherry and raspberry notes along with integrated acidity and minerality. Getting a decade-old wine that drinks this well at this price is impressive and as such it remains one of the great bargains in Italy's vast wine realm. It would pair nicely with lasagna or roast chicken.

Ever since the winery first opened, they have continued to grow and produce some of the best wines Puglia has to offer.

Taking its name from the farm where the Taurino family started making wine, The Notarpanaro is made entirely from the Negroamaro grape. The grapes come from a single 25 hectare plot and the resulting wine is aged for two years in concrete tanks first, followed by a further half a year refill barriques before bottling. Here is what Wine Enthusiast has to say about the 2010 vintage:
"This well-priced, aged wine offers aromas of brandied cherries, spiced game and herbs on the nose. Its round feel and soft tannins make it entirely approachable to drink on its own, while its savory palate and graphite finish make it a perfect accompaniment to braised lamb or duck."

This ancient Puglian varietal is well adapted to the warm dry climate and frequent sea breezes of the Salento appellation. The Primitivo grown by Paolo Leo is bold yet structured resulting in a medium-bodied wine with smooth tannins and fruity flavour. Pair with cured meats, aged cheeses, roasts, and well-seasoned tomato-based sauces.

Negroamaro is a native variety of Salento. The grape gets its name from the Latin word for black due to its rich ruby colour. Despite its high concentration of tannins and full body, this wine is elegant and well-balanced. Notes of fruit and spice on the finish make this IGP wine great for roasts, cured meats, medium-aged cheese, pizza, and second (or secondi) pasta dishes.
