Eau Claire Single Matl Batch 004 has arrived.... Produced from 100% Alberta malted barley it matured in New European Oak and ex-Bourbon Barrels. Bottled at 43%. 

Producer Tasting Note

Nose: Toffee, caramel, apple

Taste: Caramel apple, subtly sweet toffee, butterscotch

Finish: Long warm finish, lingering honey sweetness

Producer Description

"Alberta’s arid climate lends itself to a unique spirit aging process for Single Malt Whisky, with variation in temperature and humidity throughout the year the spirit concentrates and ages more rapidly than in more tepid climates such as Scotland. This leads to a larger “angel’s share” with a loss of around 10% per year compared to the 3% typical in Scottish Single Malt, however, in this process we have found the alcohol content of our aging whisky rises during the aging process meaning the loss of water over alcohol. This will in turn increase extraction of flavour compound from the wood and develop into a more complex spirit in less time. We believe that this makes our spirit different than any other produced around the world."

"Comparing Batch 004 to previous batches I believe we have now landed on our signature flavour profile which will set us apart from other distilleries. Batch 001, 002, 003 are all very different from each other due to the barrels available from years the first three years of production. With the knowledge we have gained from previous batches I believe we have created a whisky, which will still vary from batch to batch releases, but that will always have a flavour profile characteristic to Eau Claire Distillery. This will hopefully be apparent to consumers so that when they finally get to try it, they will find comfort in the familiar flavour of Eau Claire Distillery Single Malt."
