Following a typical Burgundy wine making process at Saint-Véran, the lees are kept in suspension through stirring or pumping, to encourage the autolysis of the yeasts by freeing the "fat" part into the wine. It reveals an intensity of ripe fruit and white flowers giving a stylish, rich and full palate while retaining minerality and acidity with notes of lemon curd, stone fruits.

Whilst 2018 may well be Aline Beauné’s first ever solo vintage, she’s no stranger to winemaking in the Cote Chalonnaise. For 15 years she has been heading up the winemaking for Château de la Crée (a domaine based in nearby Santenay) when a few years ago she decided it was time to do it all herself. So when the Buxy co-operative’s lease on 5ha of her families 12ha of Montagny vines came to an end she jumped at the chance. Her 5ha are found in the commune of Saint-Vallerin and are split between; 12.5% Aligoté, 25% Bourgogne Blanc, 50% Montagny Villages and 12.5% Montagny 1er cru Chazelle.

Eve and Michel Rey produce natural, honest white Burgundy in miniscule quantities from the finest terroir in the Mâconnais. Their “La Roche” vineyards—Mâcon-Vergisson and Pouilly-Fuissé—are not only the highest vineyards in their respective appellations but, we believe, also deliver the purest expressions of Chardonnay in the region, bar none.
The Reys moved to Vergisson in 1988, as Michael was hired as a vineyard manager for a regional winemaker. Bit by bit, the couple saved their money and purchased small yet select parcels whenever they could. From the soil to the cellar, Michel and Eve do everything by hand, and it’s just the two of them—such diligence and dedication is what makes their bottles so special. They don’t have tons of vineyards; they don’t overextend. Through hard work and savvy winemaking, this duo is mentioned now in the same breath with Vergisson’s leading artisans, such as Daniel Barraud (who we also have some wine coming from) and Jean-Marie Guffens.
Their modest winery offers a breathtaking view of the Vergisson valley, and the wines faithfully mirror the majesty just outside their cellar door. While the word “artisan” is so often bandied about in wine, it is winemakers like the Reys who are true artisans, crafting with four hands works of vinous art, each and every vintage.

Eléonore Moreau Chablis comes from the small, picturesque village of Poilly-sur-Serein, located 15 minutes away from the the town of Chablis. Within this village, Eléonore is the only winemaker to commercialize and bottle her wine (only about 15% of her production is bottled for export), and we are so glad she decided to share her wines with the world!
