An experimental wine created from the unison of Viura and Sherry yeast. The yeast developed a flor ontop of the wine (a layer of yeast feeding off the wine) that created a nutty, yeasty element to the citrus focused Viura. Drinks like a white wine with some of the characteristics we love about Sherry. A uniquely bold, yet elegant wine that is perfect for fondue!

This wine is made from a low yielding plot of Grüner Veltliner. The grapes are destemmed and crushed into 600L acacia barrels. 30% of the skins are retained and left in contact with the fermenting wine for two weeks. A veil of flor spontaneously formed over the wine and remained for seven months before the wine was racked and bottled. 13% ABV

The Viole from Domaine Marnes Blanches is a natural vin-jaune style wine coming from Jura, France. Made from 100% Savagnin aged under a small layer of flor, this wine has aromas and characteristics of walnuts, almonds and butter, notes of toast and aromatic spices, finishing with some delicious minerality. This wine is to be enjoyed with Comte, a high-alpine cheese from Jura.
