Matured in a combination of ex-Bourbon and ex-Oloroso Sherry casks, expect deeper fruits and spice notes than you'd normally find on a triple distilled whiskey from the Emerald Isle. Bottled at 40%.

Producer Tasting Note
Nose: Ripe and fruity with luscious peach, dried apricot, and tropical fruits. Hints of orange blossom and vanilla fudge.
Palate: Vanilla sweetness, granola, toasted almonds and honey, a little oak, digestive biscuits, apricots, and a hint of coca.
Finish: Long lingering finish with a light maltiness and sweet oak. Not so much a finish, more of an encore.

Founder's Reserve is the flagship bottle in the Irishman Whiskey range. It is a blend of 70% Single Malt and 30% Single Pot Still Irish Whiskey. All components are triple distilled and matured in ex-Bourbon Casks. Bottled at 40%.
What is Single Pot Still Irish Whiskey you ask? It is whiskey made using a combination of malted and unmalted barley. Why do this you ask? Why, to dodge unfair taxation, of course! The Malt Tax came into being in Ireland for a short time starting in 1785, enforced by the (insert expletive said in your best Irish accent here) English. The Irish, being Irish, decided that they didn't need to use malted barley for the entirety of the mash used to distill whiskey and started adding portions of unmalted barley. Necessity being the mother of invention, this eventually became a legitimate style of whiskey-making that is now not just celebrated but codified into law in Ireland with the Single Pot Still Irish Whiskey classification.

This is an Irish mystery malt, with the original distillery behind the whiskey being kept secret. Walsh Whiskey - the company behind The Irishman and Writer's Tears brands - does not currently have a distillery, though one is in planning with the hope to open in 2026. Rumours usually go with the whiskey originally coming from Midleton Distillery or perhaps Bushmills Distillery. Only 5,000 bottles are released a year. The triple-distilled whiskey is bottled at 43% after maturing for at least 12 years in ex-Bourbon casks.
