This double pot distilled Mezcal comes from an Estate in Palenque in Sola de Vega. The agave was cooked with dead wood and producer used a wild fermentation. Distilled in 2015, Lot MXN 03/15.
Producer Description: "Similar to the entire Los Siete Misterios lineup, the Mexicano was distilled twice in hand made clay pots to achieve a traditional Oaxacan ‘pot strength’ mezcal. The agaves were cooked in earth oven pits, using nearby deadwood and river stones. They were hand smashed in Sabino wood canoes. Fermentation occurs naturally using wild yeasts. This mezcal comes straight from an estate Palenque in Sola de Vega. Los Siete Misterios continues to be an international benchmark when it comes to traditional clay pot mezcal distilling. Like many clay pot expressions, this mezcal will change and improve once the bottle is opened with a little oxygen exposure."
Producer Tasting Note
Aroma: Delicate aromas of mint, incense, floral hues like lavender, intense cooked agave, vanilla and chocolate sparkles.
Palate: Smoked olive, wet earth and snuff. Sweet plantain, pastry and cookie dough with a eucalyptus/lemongrass refreshing character. Ever so slightly bright green herbaceous but retaining intense agave character.
Finish: Elegant and complex. The clay pot distillation offers extended mineral notes and intense flavour.

This is another line of single varietal Mezcals, though this one from Durango. Not a ton of Information is out there about the Mezquital varietal (aside from that it’s viable from the ages of about 9 to 13 years) so we let the bottle speak for itself. Dry with a moderate smokiness, but an essence of agave penetrates through it all. Hints of honey and minerality come through towards the finish

Cenizo Colonial is a line of single village Mezcals from the state of Durango. This Cenizo spirit is from the village of San Miguel Temoaya. The machete crushed agave is wild fermented and distilled in unique “Filipino-style” stills. More unique still is the aromas on this bottle. Sweat, light smoke and hints of reptile aquarium with a dry, earthy palate with light tropical fruit and floral notes.
