This is the cask strength version of Redbreast 12 Year. This single or pure pot still Irish whiskey is triple distilled from a mash of malted and unmalted barley.

What is Single Pot Still Irish Whiskey you ask? It is whiskey made using a combination of malted and unmalted barley. Why do this you ask? Why, to dodge taxes, of course! The Malt Tax came into being in Ireland for a short time starting in 1785, enforced by the (insert expletive said in your best Irish accent here) English. The Irish, being Irish, decided that they didn't need to use malted barley for the entirety of the mash used to distill whiskey and started adding portions of unmalted barley. Necessity being the mother of invention, this eventually became a legitimate style of whiskey-making that is now not just celebrated but codified into law in Ireland with the Single Pot Still Irish Whiskey classification.

"Made from a mash of malted and unmalted barley and then triple distilled in copper pot stills, Redbreast 12 boasts the flavour complexity and distinctive qualities of Pot Still whiskey. Matured in a combination of Bourbon seasoned American Oak barrels and Oloroso Sherry seasoned Spanish oak butts, the distinctive Redbreast sherry style is a joy to behold in each and every bottle. The Cask Strength expression gives a glimpse of Redbreast 12 in its natural, full flavoured taste."

Producer Tasting Note

Nose: Succulent exotic fruit with a little citrus, complementing deeper notes of dried apricot and sultana. Infusion of assorted spices and toasted wood.

Taste: Rich, fully rounded and mellow with luscious fruit and spices. Sweetness of vanilla and a touch of oak.

Finish: Satisfyingly long with the sophisticated combination of fruit and spices slowly giving way to toasted oak, then barley.

"Irish Distillers has already released two 90+ pot still whiskeys this year, but this is the knockout blow, an immense take on the wonderful Redbreast. The nose gives little away, all damp autumn leaves and fermenting forest fruit, but on the palate it's a fireworks display, a colorful mix of apple and pear, berries, vine fruits, chocolate liqueur, and oily pureed fruit. It's coming to the States soon, and rumor has it there's more to follow. But this will do. I can't think if I've ever tasted a better Irish whiskey."
