Jefferson's Ocean Aged at Sea Bourbon travels the world to create a unique flavour profile, with the ship it resides on making multiple stops at different harbours in the voyage as well as experiencing the different weather along the way. In the 17 and 1800s, Bourbon travelled down the Ohio and Mississippi Rivers to New Orleans. Ageing whisky on a ship may speed up the process and add unique character. Voyage 28 is bottled at 45%.

Captain's Log Notes for Voyage 24
"The driving force behind OCEAN Voyage 24 was to introduce a New Experiment to the Jefferson’s OCEAN franchise. On all other voyages, the bourbon traveled across the equator several times, experienced hot and cold weather in the North Atlantic and South Pacific and seas that ranged from calm to violent. The OCEAN Voyage 24 Experiment would test the effect of high heat, all the time. OCEAN Voyage 24 spent all of its time at sea in the Caribbean where the air temperatures were always hot. The containers on board served as “Heat Ovens” as the bourbon visited exotic ports of call throughout the Caribbean and Central America. Throughout the voyage, the humidity was tropical and the average temperature inside the containers was 93.82° F, reaching a maximum of 124.52° F.
Storm activity in the Caribbean started earlier than normal, went dormant for a while then came back strong with eight named tropical depressions thus far. Storm Elsa crossed our path but all other activity passed to the north or west of the course. The waters surrounding Voyage 24 were for the most part quiet but, the sea is never still. The constant motion of the water, tropical humidity and high heat encountered during the Voyage 24 experiment has resulted in a bourbon that is both unique and exotic. Caramelization and enhanced tones of vanilla extracted from the wood give it a sweet taste, mellow pallet and laid back finish. The American Prairie Bourbon takes its name from the American Prairie Reserve, which is a group attempting to create the largest wildlife reserve in mainland USA. This Straight Bourbon itself is composed of whisky sourced from multiple distilleries including the 75% Corn, 21% Rye and 4% Malted Barley Mashbill of MGP Distillery of Indiana, and a few other undisclosed Bourbons from other distilleries. The components between three and thirteen years of age before being blended together and bottled at 46% ABV.

“Angel’s Envy Kentucky Straight Bourbon is finished in port wine casks for an award-winning spirit. We guide each batch’s conditioning, blending our handcrafted bourbon in small batches of 8 to 12 barrels at a time. It’s typically aged for up to 6 years. While we lose about 5% of the spirit each year to evaporation, or “the Angel’s Share,” what’s left behind after we’re done is truly worthy of envy.
Once it’s deemed ready, we finish our bourbon in ruby port wine casks, which adds subtly distinct flavor nuances that enhance the whiskey without challenging it. Our port finishing process lasts between three to six months, depending on taste. We use 60-gallon ruby port barrels made from French oak and imported directly from Portugal. This creates a whiskey of unprecedented smoothness, sweetness and balance.”

It is one of the few Jim Beam-made Bourbons to retain an age statement on the label, Baker’s is a minimum 7-year-old Bourbon and part of the Jim Beam premium line that also contains Booker’s and Basil Hayden’s. Named after Jim Beam’s nephew: Baker Beam, it is bottled at 53.5% ABV or 107 Proof.
