"Pays d'Auge PDO cider is a naturally fermented cider, unpasteurized and uncarbonated.

PDO: Protected Designation of Origin (European equivalent of the French AOC).

Pays d'Auge cider is produced using traditional methods:

Harvesting of ripe apples / Washing and selective sorting of the fruit / Crushing of the fruit / Vatting of the pulp in the open air to allow the aromas to be released and the juices to take on their color / Pressing of the pulp / Clarification of the must / Slow alcoholic fermentation in vat obtained thanks to the indigenous flora (1 to 4 months depending on the musts) / Natural secondary fermentation in the bottle (minimum 3 months).

The strict Pays d'Auge Cider Appellation mandates analytical testing. Every year, an approval committee under the supervision of the INAO (National Institute of Origin and Quality) conducts an organoleptic examination.

This is an unpasteurized and uncarbonated cider."
