Alberta is a "grapeless land" but that doesn't prevent us from making a delicious alternative to "grape" wine. Spirit Hills is a meadery located in Millarville, just south of Calgary. Owned and operated by the Bonjean family, whose lineage includes generations of French winemakers with vineyards in the Auvergne, France they have turned their generational talent to the cultivation of honey bees. The Spirit Hills' bees are sustainably managed and make their honey from the wild flowers of the pristine pastures and forests of the Rocky Mountain foothills. Their Dande Honey wine (took top marks at the 2014 Alberta Beverage award ceremony) is a nod to the early settlers of Alberta who used to make their wine from Dandelions. Here's what the folks at Spirit hills have to say: "medium-dry wine, best served cool, although some prefer it at room temperature.  It smells of pastures full of wildflowers, the fresh morning dew, and the delicate texture of its golden flower petals.  It arrives on your tongue, fresh like the awakening foothills, warms you up like the sunshine and leaves you with an earthy sensation of embrace."
