PERFUMED & SULTRY: This 21 year old Orcadian matured in a Refill ExBourbon Hogshead and was bottled at 53.7%. "Last night's bonfire was still hanging heavy in the air with ash specks, leaving a faint smoky umami taste on our palates." 

Panel's Tasting Note: "‘I’ve been transported to an Irish lochside’ one panellist exclaimed!Pebbles, rocks covered in dry seaweed, a fresh rural breeze and hay bales presented themselves on the nose, alongside black pepper,damp young wood and custard creams. The initial taste was very green: seaweed, spinach, moss, peppermint and peppers, all on one pile and sprinkled with salt flakes. Last night’s bonfire was still hanging heavy in the air with ash specks, leaving a faint smoky umami taste on our palates. Water tamed the dram and released lemon sponge, vanilla and melted butter. Perfumed and sultry. The reduced palate was sweet,drying, fresh and interesting. BBQ’d strawberries, rosemary, heather,moss and parma violets. A most savoury and unusual offering from this Orkney distillery."
