Blanton first bottled his private reserve bourbon nearly a century ago. Blanton believed the “center-cut” or middle sections of Warehouse H were the best for aging his bourbon. Personally tasting and choosing each barrel, these barrels were reserved and bottled for ambassadors, dignitaries, family and friends becoming the world’s first single barrel bourbon. "Corn, rye, barley, and soft white wheat are grains extensively utilized in the expansive value-added cattle industry in Southern Alberta, culminating in the production of our renowned Alberta Beef. Lars combined these four grains in a mash-bill, yielding his favourite whisky—a sweet, buttery sipping experience with subtle hints of oak and brown sugar."
About Pivot Spirits
Pivot Spirits was founded in 2018 and resides in Rolling Hills, Alberta — about a 30-minute drive south of Brooks. If you zoom in on Rolling Hills from a satellite image on Google Maps you will see where the name Pivot Spirits comes from: all the fields in the area have the tell-tail rounded and circular shape of pivot irrigation. The distillery is co-owned by Lars Hirsch and Rachelle Fiset. Lars is an irrigation farmer with fields just across the roads from the distillery and the distiller as well. Just about all the grain used at Pivot Spirits uses for making Whisky, Gin, and other spirits comes from his fields. The only exception to this is when Lars uses corn, which he gets from his neighbours. Pivot Spirits does not malt or roast any of the grains it uses — it comes directly from the field, is ground down, and made into a mash.

“Angel’s Envy Kentucky Straight Bourbon is finished in port wine casks for an award-winning spirit. We guide each batch’s conditioning, blending our handcrafted bourbon in small batches of 8 to 12 barrels at a time. It’s typically aged for up to 6 years. While we lose about 5% of the spirit each year to evaporation, or “the Angel’s Share,” what’s left behind after we’re done is truly worthy of envy.
Once it’s deemed ready, we finish our bourbon in ruby port wine casks, which adds subtly distinct flavor nuances that enhance the whiskey without challenging it. Our port finishing process lasts between three to six months, depending on taste. We use 60-gallon ruby port barrels made from French oak and imported directly from Portugal. This creates a whiskey of unprecedented smoothness, sweetness and balance.”

Buffalo Trace distillery is named after the trails of destruction that Plains Bison would leave as they moved from one place to the next. Like Eagle Rare, George T. Stagg, Stagg Jr, and EH Taylor Bourbons, Buffalo Trace Bourbon is made using the distillery's #1 Mash Bill, which is a high corn/low rye content mash in style. This means it is a very high corn content and likely at or less than 10% Rye, with 3-5% Malted Barley making up the remainder. It is purportedly aged for 8-10 years before being bottled at 45% ABV.

Release 003 from Baldur's Whisky/Last Mountain Distillery is a Bourbon Style dram. Made from a mash bill of 68% Corn, 21% Rye, and 11% Malted Barley. It was matured for 6 years in charred new oak casks before being bottled at 45.9%. Only 266 bottles for this batch.
Baldur's Whisky is made by Last Mountain Distillery, which was founded by Colin and Meredith Schmidt. The distillery resides in Lumsden, Saskatchewan. Established in 2010, Last Mountain was the first micro distillery to launch in the province; in a garage no less. The equipment was moved to its current building a year later. Last Mountain creates a multitude of spirits including Gin, Vodka, Rum, and whisky.
