The philosophy of Podere Sapaio is to experiment and innovate: searching for new expressions of Bordeaux vines in Bolgheri, to produce wines that are strong, elegant and long lasting at the same time. The name Sapaio come from an ancient Tuscany vine. It was purposely chosen to exalt the local origins of the product beginning with its name. The crown on the trademark for the Podere Sapaio is a tribute to the nobility of the wines and the land, which are always respected in the work that is carried out in the vineyard and in the cellar.

Second-generation winemaker Johannes Davaz isn't from Tavernelle. Originally, he worked for his father in the family's Swiss vineyards and wine cellar before going to college to study enology. Years later, when the Davaz family took over the Poggio al Sole estate, Johannes (known locally as "Giovanni") undertook the responsibility of overseeing the new venture. There are not a lot of Chianti producers making syrah but when we first tasted this we wondered why. Stylistically, it's closer to the Rhone style than an Aussie shiraz. There's a great interplay of fruit and savouriness on the nose, with ripe cherry, pepper and cloves as well as a hint of violets. Structured on the palate, starts with lots of juice, ripe tannins, dancing acidity, savoury, persistent finish. Organic and vegan-friendly.

In the 1920s, the Daddi family purchased the castle and its surroundings, and in their attentive care, it would remain for almost 100 years. Francesco Daddi took the reins of the family estate in 1997 and worked tirelessly at making incremental improvements, not the least of which was the return to the organic viticulture of his ancestors. He also worked closely with renowned architect Alessandro Loni Coppedè to restore crumbled portions of the castle and the gardens to their former glory. Francesco is mild-mannered and affable, the very definition of a gentleman. But he harbours a perfectionist streak that has led to world-class wine. The vineyards surround the Castello at altitudes ranging from 300 to 500 meters, with south and southwest exposure, and marl and chalk soils. They grow primarily Sangiovese, the most vital grape to Tuscany, along with small plots of other native varieties. The vines’ excellent exposure combined with the deftly tempered use of oak in the cellar makes for formidable incarnations of Chianti Classico, structured and powerful yet subtle and grounded.
