"First this 100% B.C. rye grain whisky spent its first few years in new American oak casks. Second, and only once the whisky is already matured, it is transferred to once used Pedro Ximenez sherry casks. These freshly emptied casks are shipped directly from Spain. They come with a complimentary few litres of Sherry wine. Not only is this wine an assurance of cask quality, but we enjoy using it in our lounge cocktails! Finally, we taste the whisky in the casks, only bottling once we’ve achieved the flavour we are looking for."

Nose: rich fruits, lightly toasted rye bread with strawberry jam, wildflower honey, salted caramel, orange zest, pecan.
Palate: ripe dates, blackberries and blackcurrants, brown sugar, dark chocolate with raspberries, fig, fresh caramel, butterscotch candies, sweet orange marmalade.
Finish: long and creamy, butterscotch toffee, black currants, raisin chewiness, rye spice with a hint of sweet cinnamon and mulled wine.

"Following his discovery of Rye in Bourbons, Gilles decided to look for a good 100% rye spirit (no malt, no corn, nothing else). He discovers it after a trip to Prowein (Germany) by visiting the Zuidam distillery (Whisky Millstone) in the Netherlands. When Gilles acquires this whisky, its colour is still very light even after years of aging. The Ratafia Champenois is providing this whisky a lot more than its colour."
