This is a winery located in downtown Toronto. They source juice from various parts of Ontario. It's a natural wine, a blend of Gamay | AND Blaufränkisch from Four Mile Creek in Niagra. Fruit was picked early and de-stemmed before being pressed into stainless steel for closed top fermentation and left to age for five months before blending. The result is electric acid and a salinity that keeps the wine fresh, yet restrained.
