Translated as ‘Lazy Bones’ in Spanish – Dormilona is a producer of natural wines, made lovingly and organically using low-impact, minimal intervention techniques. With her winery, Dormilona based centrally in the town of Margaret River, Jo continues to produce wine of outstanding and original quality. Tinto is made in the young nuevo style grown from organic Shiraz from Osmington. Simply harvested in the cool morning light, wild fermented in open bins then basket pressed off to tank before sugar completion. Natural malo, racked, blended & bottled. No additions, finings nor filtration to bottle. Only minimal sulphur.
