Edoardo Miroglio founded his production in 2002, after falling in love with the soil and climate of the Thracian Region. He works fully with organic vines, producing an array of lines. His EM line is his premium quality line, focusing on showing the complexity the terroir gives to the wine. Dubois Cocottes Fleurie

A Classic Beaujolais for Autumn!
Anne-Sophie Dubois is a young dynamic winemaker situated in the cru of Fleurie, Beaujolais. Her family moved from Champagne, where they were previously winemakers, to Beaujolais in 1992 and purchased a Domain. At 23 years old, Anne Sophie took over the Domaine in 2006. Since then, she has converted all her vineyards to organic and is currently 2 years away from getting her vineyards certified organic. In the cellar, she works with a minimal intervention approach. She uses a gravity-fed system with no chemicals other than a small addition of sulphur before bottling. She ages all of her wine in oak, stating:
“I am very attached to the ageing of my wines in barrel, but not to bring a woody taste. I love this material. The wood is natural, the wine breathes through it, it comes out clear and open.”
She also happens to be an artist, the beautiful labels are hers as well.
Christina St Laurent

Christina Netzl began her path towards natural winemaking as a young girl of 5 years old, working on her family’s farm and vineyard with her parents and grandparents. Her parents later focused the family business solely on grape growing and winemaking, building the winery up to the 28 hectares they operate today in the Carnuntum. In 2013, they began the process of converting everything to organics, starting with soil treatments and elimination of herbicides, followed by eliminating pesticides and 100% organic vineyard management, and then finally organic production in the winery. In 2018 they began the official process of certifying organically.
The St Laurent grapes are hand-harvested and destemmed to stainless steel tanks. The spontaneous fermentation is slow due to the cool temperatures in the old cellar. Malolactic fermentation is done in old big oak vats, where the wine rests for another 4 months. The wine is bottled unfined and unfiltered with a small addition of sulphur.

It is largely thanks to these efforts by Elisabetta and a few other dedicated growers in the Mezzolombardo area of Trentino that the Teroldego grape has survived."
