A sparkling rosé Cava with a delicate mouse and plenty of crunchy red fruit on the palate. It's delightfully refreshing, and not too tart (think strawberries and cream). It's made from the indigenous variety Trepat, a relatively unheard of varietal (because there's only about 1000 ha of it planted in Spain) and it's pretty much only used for Cava. This bottle of bubbles is the perfect accompaniment for lighter meals like spinach salad with a pomegranate vinaigrette, spicy Thai cuisine or seared Ahi Tuna.
